Omo’s Oil

“You know, Sulphur Springs is much nicer after dusk,” Omo said. FYI, tourists don’t go to the Sulphur Springs after dark, only locals. But hey, Joe and I are always up for an adventure, and Omo had not been wrong yet. Besides, even though we had only known Omo for a few days, we had already taken a liking to him, in a younger brother sort of a way. So, when he asked us to join him we agreed with no hesitation.

Chef Joe’s Culinary Challenge!

What does King Foodie Chef Joe do when you give him a hot plate, skillet, knife, cutting board and five basic ingredients?
 
He creates a five star meal! Duh.
 
Honestly, Chef Joe’s culinary creations were likely the tastiest meals we ate during our entire trip!

What Has “King Foodie” Been Eating This Past Week?

The million dollar question is, “What has King Foodie been eating all week?”
 
Surprisingly, Joe ate very moderately during our vacation. I was perplexed by this, and spent a few nights tossing and turning, wondering “Why? Why? Why?”
 
On the plane ride home, I decided to ask Mr. Foodie “Why?” out of concern that he was not feeling right. I threw out some possibilities, “Sun poisoning?” “Lack of sleep?” “Too much rum punch?” “Were you bitten by a strange jungle bug?” Joe responded, “It was probably just due to the heat and being so active.” For example, when struggling up the rocky, 2619 ft Gros Piton, out of breath, covered in a mix of dirt, mud, rain, and sweat, your snack is a banana and piece of bread, not a hodge-podge of gourmet delicacies equivalent to a four course meal- Yup, even if you are our favorite foodie, Joe.

We’re Back

After ten amazing days in St. Lucia we are back in NC. Although Joe and I are looking forward to resuming routine, we were both very sad to leave. Perhaps our fond attachment to the island stemmed from how deeply we emersed ourselves into the culture. We tried to do everything the way the locals did it – we trekked endless hours by foot on gravely roads in the pouring rain, used public transportation, bought food from the market, and explored hidden tropical locales that only the locals know. We noticed the tremendous amount of pride St. Lucian’s have for their country, and respect they have for their land. It was awesome to witness and experience nature’s gifts that grow from St. Lucia’s soil, as well as the wild life on land and in the sea.

“Garden of Eden”

While researching accommodations in St. Lucia, each property appeared lovelier than the next. However, the Fond Doux Holiday Plantation won our hearts!

The Fond Doux Holiday Plantation in Soufriere is a restored 1864 plantation home, on 135 hilly acres with 11 individual cottages set amongst lush, tropical gardens. Here is the good part- it is still a working plantation, and produces cocoa, citrus, banana, coconut and vegetables. Spelling it out, that means, King Foodie will be in his very own, “Garden of Eden,” surrounded by delicious edibles growing all around him- think Charlie and the Chocolate Factory!

St. Lucia

Joe and I are visiting St. Lucia for our summer vacation. We are so excited! Here is some info about how we planned our trip.

First, we narrowed our trip (from anywhere in the world) down to the Caribbean. I wanted to incorporate my love of the beach, outdoor activity, eco-adventure and exploration with Joe’s love of food.

St. Lucia was a top choice from the start. It is gorgeous, lush, with beautiful beaches, and is relatively undeveloped compared to other neighboring islands. Many of the fancy, 5 star, spa hotels are pretty pricey for our current budget, so I focused my research on eco-lodges, bed & breakfasts, cabins and cottages. Not only is this type of lodging less expensive, but may also provide a more intimate experience.

I further narrowed the location to Soufriere, the small fishing village in the south known for its magnificent lush scenery- most recently, in the lime light as the location for ABC’s The Bachelors overnight dream dates. Best Pizza Ever

Why make pizza at home? Read this and find out…
Joe and I had our friends, Lindsay and Corbett, over for dinner last night. We don’t get to do this often enough due to Joe’s cuh-razy schedule. It took us little time to decide what to prepare for our guests because you can’t beat pizza and Joe makes the best!

The Fearrington House

Joe and I celebrated our two year anniversary with a dinner at The Fearrington House (where Joe works).

For those of you unfamiliar, Fearrington Village is a charming, picturesque property located near Chapel Hill, NC. There are many attractions in this unique community including a 5-star Inn, scenic gardens, walking paths, boutiques, restaurants, and their famous belted Galloway cows. In addition, Fearrington has lovely venues for wedding receptions and hosts events such as art shows, culinary classes and book clubs.

Dining at the Fearrington House is truly a special experience. Upon entering, you are warmly greeted by the host, Juris. From that moment on, you are made to feel like an important guest due to the attentive, professional staff. The atmosphere is intimate with multiple small rooms, all elegant, yet simply decorated, treated windows overlooking the gardens, and soft lighting.
