Sweet Potato Latkes
Potato latkes at Chanukah are a significant dish, not because of the potato, but because of the oil. You may want to try this variation made with sweet potatoes. They are equally delicious but very nutritious due to the abundance of anti-oxidants in the sweet potato. I made these for Foodie the other night and they were a big hit!
1 large grated sweet potato
½ small grated apple
¼ cup chopped onion
2 tablespoon Greek nonfat yogurt
2 eggs + 1 white beaten
¼ cup
1/3 cup flour
½ teaspoon salt
1/8 teaspoon cinnamon
1/3 cup sliced almonds
¼ cup dried cranberries
Mix yam, apple and onion. Mix eggs with yogurt and fold in. Fold in flour, salt, cinnamon, then almonds and cranberries. Heat skillet. When hot brush with oil. Form into patties and fry until both sides are golden brown. Place on greased cookie sheet. Bake in 325 degree oven about 10 minutes or until completely done. Makes six large latkes. Serve with non-fat Greek yogurt.
