Here is a question from a reader:
“Happy Chanukah! Thanks for the latkas recipe. My mom used to make them all the time when I was a kid. I’ve never attempted, I did try to make healthy Matzah balls using whole wheat Matzah meal and they tasted like cardboard rocks lol. Any suggestions to soften them up? Hope you are doing well. I always enjoy your cooking tips and seeing your pictures.”
Hey Maddie, good question. I ran it by Chef Joe and he said, “You might want to add chicken fat, or play with the ratio of egg and liquid to Matzah meal.” Don’t worry, I told the Chef, “This girl would not use chicken fat.
