Leftover Makeover

Yesterday I got a craving for cold sesame noodles from a Chinese restaurant. I drove to two Chinese restaurants in my neighborhood but to my surprise, neither had them. My craving was so strong that I decided to keep trying, drove to Shanghai Restaurant on Hillsborough Rd. in Durham and boo yah, got my noodles!
They definitely hit the spot last night and I had plenty left over. Tonight for dinner, we decided to have Chef Joe revamp the left over noodles and create a new, even tastier dish! At Whole Foods we purchased Asian style veggies to add to the noodle salad and fresh ground peanut butter for a dressing. Joe selected snow peas, diakon, and water chestnuts, carrots for color, and shallot for a more refined onion flavor. FYI, Whole Foods was out of canned water chestnuts, so we decided to try the fresh ones. Wow! The fresh ones taste so sweet and flavorful – definitely worth it if you have the option. Chef Joe’s Soy-Ginger Glazed Salmon

Yesterday I was lucky enough to get Joe all to myself for the entire evening! Hand in hand we strolled through Duke Gardens admiring the beautiful scenery, lush plants, and colorful flowers while searching for the perfect secluded spot to… Well, the Gardens were quite crowded, so THAT was not going to happen. Instead, we decided to zero in on the enchanting wildlife and all the cute critters that make the gardens their home. I noticed Joe salivating when he “joked” that we could catch a fish, turtle or duck and cook it for dinner. Don’t worry, we stopped at Whole Foods on the way home and purchased two pieces of salmon.

Vietnamese Summer Rolls

My brother and his girlfriend, Sandy, were visiting this past weekend. Lucky for us, Sandy is a fabulous cook, particularly for Asian cuisine (her parents even own a Chinese/Vietnamese restaurant). Joe and I were excited to take advantage of this opportunity to learn how to make authentic Vietnamese Summer Rolls. They are easy to make, healthy and lite, and would make a great lunch or appetizer.

Delicious, Cheap Vietnamese – Bahn’s Cuisine

It’s no surprise that my first memory of Joe revolves around food. New to the area back in 2004, I wandered into Bahn’s Cuisine on 9th St in Durham and found Joe enjoying his favorite, the vegetarian plate. In between mouthfuls of food he managed to talk, flirt, get my number, and even make a pitch for how great and cheap the food is. Six years later, I am married to Joe and Bahn’s remains one of our favorite restaurants, the perfect choice for our first restaurant review.

Enter Bahn’s, and get ready to be underwhelmed. A small stark room, barely fitting seven tables and fold out chairs. There are a few Asian style pictures on the wall, but you won’t notice them at all. Don’t pay attention to any of this, just make your way to the Specials board. If it is Wednesday or Saturday you are in luck, as they have their authentic Vietnamese menu featuring the vegetarian plate, their most popular dish and our favorite. After you order, quickly find a seat, because if it is lunch or dinner time Bahn’s can get quite full. Oh, and be prepared because they only take cash. [ Read the full article ] »
