Chicken, Green Bean, Corn and Farro Salad with Goat Cheese is a lovely spring is in the air type of dish, perfect for a healthy meal or entertaining. I particularly enjoyed the crunchy combination of the farro, corn and green beans.
Although I am sharing the recipe found on epicurious.com, feel free to alter in any way. For example farro could be substituted by any grain such as couscous or spelt berries. Also, we omitted the cheese and marjoram from our dish.
But, if you can get your hands on farro, I strongly recommend it. I was amazed by the nutritional content of this grain, popular in European countries. FYI, farro is a whole grain with twice the fiber and protein than wheat. In addition to minerals and vitamins, farro is high in antioxidants, phytonutrients and betaine. [ Read the full article ] »
Mami Nora’s
Pulling up to Mami Nora’s on Davidson Ave, I was getting a good feeling already… “This is it! My fave, ‘hole in the wall’, diamond in the rough!” I exclaimed to Foodie. However, Joe was well beyond chit-chat and conversation, bee-lining straight for the door. Once inside, even I became transfixed by the amazing rotisserie smell permeating the air, and was eager to get down to business.
Standing at the counter, reading the menu items on the overhead board, I thoroughly enjoyed soaking in the warm, bright, homey atmosphere. I think I was even tapping my toes. Rotisserie is sold ¼ White/Dark, $4.99, ½ Chicken, $6.99, or Whole Chicken $11.99. All meals come with two sides which include rice, black beans, French fries, chicken soup, yucca fries, sweet plantains, house salad and coleslaw. 4 chicken cutlets pounded thin
Asian sweet chili sauce
Marinade
4 garlic cloves
1 inch peeled ginger
1 stalk lemon grass (chopped)
1 cup coconut milk
3 tablespoons soy sauce
1 tablespoon honey
2 tablespoons curry powder
1 teaspoon pepper
Directions
Process garlic, ginger, lemongrass in food processor until finely chopped. Add remaining ingredients and process until combined. Marinate chicken overnight in fridge.
