African Peanut Soup

Here’s another gem that I would like to share with you, my recipe for African Peanut Soup. While living in NYC, a healthy café I frequented served this hearty, zesty soup, and I became hooked. Since then, I have not seen it on the menu at any other restaurants I have visited. So, I decided to create my own version.

African Peanut Soup is delicious, nutritious, and has the perfect balance of sweet and savory. I love this soup because it is very flavorful and satisfying, and the only ingredients are veggies, aside from peanuts. This soup makes for a delicious lunch that you will enjoy while also getting a healthy serving of vegetables.

Everyday Chocolate Cake

I recently discovered a recipe for “Everyday Chocolate Cake,” compliments of Kelly Keough, host of The Sweet Truth on Veria TV. This recipe is a true gem. Yup, it’s gluten-free, and composed of wholesome ingredients such as brown rice flour and sweet potato. But the reason I am so excited about this cake is because of it’s superstar ingredient, buckwheat groats.

People such as myself, who eat healthy, but don’t follow restricted diets such as ‘raw food,’ are probably not consuming much buckwheat. Buckwheat groats can comfortably be called a power food, as they are a good source of manganese, magnesium and fiber, have high quality protein, containing all eight essential amino acids, and rutin, a powerful antioxidant. Chocolate Tofu Cake

I am one of those people who really enjoys “window shopping” at The Cheesecake Factory’s decadent cheesecake display. I fantasize between ordering the Godiva Chocolate Brownie Sundae Cheesecake, the White Chocolate Carmel Macadamia Nut Cheesecake, or the Ultimate Red Velvet Cake Cheesecake. However, right when I am about to make the purchase, I am always stopped by the thought, “Seven bucks and 900 calories. Hmm… Do I really need this?” And I refrain. Healthy Eating Tips

For many of us, it is much easier to maintain a healthy diet during the
summer months. Our bodies simply do not crave the heavy/rich carbohydrate-laden foods. Also, the abundance of affordable fruits and veggies are equally enticing. Oh, and maybe swimsuit season has a little something to do with it.

With the change of the season, I am excited to share with you some “eating” tips as encouragement to keep up your healthy habits! Many of you know I have an interest/knowledge in health and nutrition as well as a background as a dance and yoga teacher. Happy Birthday, Daddy!

 
Today, June 12th, is my dad’s birthday! I wanted to celebrate the date by posting in his honor. The only problem was, this is a food related blog, and the guy doesn’t eat. I racked my brain reflecting on his weird diet. Is it possible to come up with a recipe to post from this? Tuna fish? No. Hard boiled eggs? Definitely, no. Grapefruit juice? No. Cottage cheese? Metamucil? No…no…no! This might be harder than I thought. Then it hit me…

Leftover Makeover

Yesterday I got a craving for cold sesame noodles from a Chinese restaurant. I drove to two Chinese restaurants in my neighborhood but to my surprise, neither had them. My craving was so strong that I decided to keep trying, drove to Shanghai Restaurant on Hillsborough Rd. in Durham and boo yah, got my noodles!
They definitely hit the spot last night and I had plenty left over. Tonight for dinner, we decided to have Chef Joe revamp the left over noodles and create a new, even tastier dish! At Whole Foods we purchased Asian style veggies to add to the noodle salad and fresh ground peanut butter for a dressing. Joe selected snow peas, diakon, and water chestnuts, carrots for color, and shallot for a more refined onion flavor. FYI, Whole Foods was out of canned water chestnuts, so we decided to try the fresh ones. Wow! The fresh ones taste so sweet and flavorful – definitely worth it if you have the option. The Other Side of the Tracks

In case you don’t already know, I walk on both sides of the tracks. As the wife of the Culinary King I have developed quite the distinguished and decadent pallet for all things rich, succulent and flavorful. Yes, please pour some white truffle oil on my pasta, and I will need some extra Tabasco sauce on my omelet. I’ll take wine with dinner. Oh, excuse me, I need both one red and one white. And yes, I savor the unrivaled and unsurpassed top notch “best beers in the world” that Joe has been sneaking into my juice these past six months, and have developed a liking for them. Well, wait a second. That last sentence, that’s a bit of an exaggeration. Sorry Joe, it’s going to take a little more work to convert me in that department… No offense.
And then, there is the other side. Yup, I was brought up on the other side of the tracks. My family’s food philosophy was PFNP, Purely For Nutritional Purposes, aka rabbit food. I enjoy going home to my roots to a kitchen filled with cottage cheese , kale and carrots. If I wake up in the middle of the night hungry, there is no cookie in the cupboard. Carrboro Raw- Your Neighborhood Juice Bar

 

I can’t tell you how many times I have walked by the Weaver Street Market and thought to myself, “I wish there was a juice bar around here.” Finally, my wish was granted when several months ago I noticed a cool, funky bus parked across the street from Weaver St. with a sign saying Carrboro Raw, smoothies, juices, green drinks.
Having a bus in the area dedicated to juice has special meaning for me. Although I have gained an appreciation for my husband’s decadent pallet, at heart, I am actually a naturalist when it comes to food. I used to live in Manhattan, and one of my favorite parts of living there was that I could pick up a juice on every street corner. I came to rely on my shots of wheat grass or vegetable juice in between dance classes and dates for a boost of energy. [ Read the full article ] »
