Zucchini Muffins
These muffins have a pleasing subtle flavor, and the addition of the coconut makes them moist and chewy.

½ cup grated apple (1 small apple)
¼ cup grape seed oil
¼ cup orange juice
½ cup brown sugar
1/3 cup agave
2 eggs (slightly beaten)
1 teaspoon vanilla
1 ½ cup whole wheat pastry flour
1 teaspoon baking soda
¼ teaspoon baking powder
¼ teaspoon salt
